Homemade Pancakes without Milk! Lazy weekend morning breakfast is the best! I love making my own pancakes so I can control what goes in them. You can dress them up or dress them down. Add dairy free chocolate chips on top or just warm maple syrup for a traditional start to your morning. Enjoy these healthy delicious homemade dairy free pancakes.
Ingredients:
- 1 cup whole wheat flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 cup almond milk
- 1/2 cup cooked and cooled oatmeal, or 1/2 cup wheat germ
- 2 whole eggs
- 1 tbs agave or honey
- 2 tsp pure vanilla extract
- 1 tbs coconut oil
Directions:
Whisk the dry ingredients together first. In a separate bowl, whisk the eggs, almond milk, honey or agave, oatmeal or wheat germ, coconut oil, and vanilla extract. Add the dry ingredients to the wet, and mix.
Heat your non stick griddle to medium heat. I like to add alittle oil or vegan butter to my griddle so the pancakes do not stick, and so that the outside of my pancakes are not dry, and that buttery flavor locks in the outside of the pancake. I also do this instead of adding butter on top when it is on the plate and ready to eat.
Laddle, spoon, or scoop to desired size of the batter on to the griddle. You will need to flip the pancake once you start to see bubbles break the surface.
Yields around nine 3 inch pancakes!
